Bacon and bean pitas recipe details
Easy lunch pitas with plenty of flavor from bacon, beans, and red bell peppers. If you want to go vegetarian, you could omit the bacon (but that would but just plain crazy.)

Ingredients
Serves: 2- 2 slices bacon
- 3/4 cup canned black beans (well-drained)
- 1/2 cup frozen corn kernels, thawed
- 2 tablespoons chopped red bell pepper
- 2 tablespoons mayonnaise
- 1 tablespoon finely chopped celery
- 1 teaspoon sugar
- 1 teaspoon finely chopped onion
- 1 teaspoon cider vinegar
- 1 teaspoon olive oil
- 1 (6-inch) pita bread, cut in half
- 3/4 cup shredded lettuce
- 1 tomato, chopped
Preparation method
Prep: 15 mins | Cook: 8 mins1. Cook bacon in a skillet over medium heat until crisp, about 8 minutes. Drain on paper towels, then crumble.
2. Toss bacon, beans, corn, bell pepper, mayo, celery, sugar, onion, vinegar, and olive oil together. Stuff into pita bread and top with lettuce and tomato.
