|6 medium||mushrooms, finely chopped|
|1 medium||shallot, chopped|
|300 ml||white wine|
|3000 ml||vegetable broth|
|150 ml||tomato sauce|
|1 tbsp||fresh parsley, chopped|
InstructionsMelt butter in a saucepan. Add the shallot and fry gently for 2 minutes.
Add the mushrooms and fry until lightly browned.
Then add the wine, tomato sauce, stock and brandy. Bring to the boil and simmer uncovered for 5 minutes. Stir occasionally.
Sprinkle in parsley, stir, and serve.
