Ingredients
Serves: 6- 6 large red or russet potatoes, quartered
- 4-5 slices bacon
- 4 ounces Alfredo style pasta sauce
- 1/4 cup milk
- 1/2 cup Cheddar cheese
- salt and pepper to taste
- 1 tablespoon parsley (optional)
Preparation method
Prep: 10 mins | Cook: 35 mins1. Clean and rinse unpeeled potatoes. Add to a pot of boiling water and cook 20-30 minutes until soft.
2. Meanwhile, fry the bacon in a skillet on medium heat until nice and crispy. After cooled, cut into small pieces and set aside.
3. When the potatoes are done, drain and return to the empty boiling pot. Mash potatoes with a potato masher until they reach your preferred smoothness.
4. Stir in Alfredo sauce, milk, and bacon. Return to medium heat for approximately 3-5 minutes until mashed potatoes are hot. Top with Cheddar cheese and parsley. Add salt and pepper to taste.
