Serves: 6
Ingredients
- 1/3 cup olive oil
- 1 garlic clove, minced
- 3 pita bread
- 2 cups dry shell pasta
- 1 cup cherry tomatoes, stemmed and halved
- 1 medium green pepper, ½ inch dice
- 1 medium cucumber, peeled and cut into ½ cubes
- 1 small red onion, ½ inch dice
- 2-3 ounces feta cheese, crumbled
- 1/4 cup black olives
- 1 TBS. parsley, chopped
- 1 TBS. fresh mint, chopped (1 tsp. dried)
- ½ tsp. dried oregano
- freshly ground black pepper, to taste
Preparation method
Turn on your oven and preheat it to 350 degrees F.
Combine garlic and some olive oil in a large bowl. Brush pita bread with oil, cut into 6 wedges each, and bake on a sheet pan until lightly browned, about 5 minutes, turning once.
Cook pasta in a large amount of salted water, only until firm. Drain well.
In the bowl with the olive oil and garlic, combine pasta and all the rest of the ingredients, seasoning at the end with the black pepper.
Serve at room temperature with the toasted pita bread.

There’s nothing better than a cold greek salad on a hot summer day. I love to add a little cold 10% fat greek yoghurt over it. Love it.
