Ingredients
400 g beef (rib eye or loin), cubed |
oil |
For the curry paste: |
3 green chilies, chopped |
1 bunch(es) coriander |
1 piece(s) ginger, 5 cm |
1 onion |
10 shallots |
6 kaffir lime leaves |
1 tbsp ground coriander |
1 dash(es) freshly ground pepper |
1 tbsp fennel seeds |
to add to the sauce later: |
1 can(s) coconut milk (400 ml) |
10 eggplants, small round white |
1 bunch(es) Thai basil |
salt and pepper, to taste |
sugar |
5 kaffir lime leaves |
2 limes, the juice |
some palm sugar |
Instructions
Blend all the ingredients for the curry in a blender and add only as much water, to make it a thick paste.
Fry the curry paste in hot oil until the oil separates.
Add the beef cubes and let cook for a while.
Add the coconut milk and the eggplants. If you cannot find white eggplants, just use normal ones, cut into 5 cm chunks.
Season with salt, sugar and some Thai basil and let it simmer for 30 minutes, the sauce must not boil. Check the eggplants if they are cooked.
Add lime juice, chopped lime leaves, chopped Thai basil, more chili if you like and some palm sugar shavings.
Serve with white rice.
