Vegetable plum pudding recipe details
Ingredients
250 g | potatoes, cooked, mashed |
250 g | carrots, grated |
250 g | sugar |
230 g | flour |
250 g | red currants |
230 g | raisins |
230 g | suet, finely chopped |
25 g | candied peel |
2 medium | eggs, beaten |
nutmeg, to taste | |
1 pinch(es) | salt |
Instructions
Mix all of the ingredients together, except the eggs. When well combined, add the eggs and stir until smooth.Pour the mixture into a buttered basin and cover with greaseproof paper and foil.
Place in a saucepan of boiling water and steam for about 4 hours, adding more water as it evaporates.
Turn out and serve hot with custard.
