Ingredients
400 g | puff pastry or flaky pastry |
For filling A: | |
120 g | raspberry jam |
For filling B: | |
175 g | diced cooking apple |
30 g | sugar |
For filling C: | |
2 medium | bananas, peeled, halved lengthwise and again horizontally |
250 ml | creme patissiere |
1 medium | egg, beaten with a little milk or water, as wash |
caster sugar, for dusting |
Instructions
Roll out the dough to between 1/10 and 1/8 inch thick, 2.5-3mm.Use a 4-inch fluted pastry cutter to cut out 8 rounds. Using a rolling pin, thin out the rounds from the centre to the bottom and then again to the top so that the length is increased by about one third.
Lightly oil two baking trays or tins.
To fill: use ONE filling only and place the filling just below the centre of each turnover. The amounts of filling provided are each sufficient for 8 turnovers.
Place two teaspoons of jam (Filling A) OR 1-2 tablespoons of apple and a sprinkling of sugar (Filling B) OR a piece of banana and about 3 tablespoons of creme patissiere (Filling C).
Dampen the edges of the pastry on both sides and bring the top down so that the edges meet. Press all around to seal.
Brush tops with egg wash and sprinkle with caster sugar. Allow to rest, loosely covered with cling film, for about 30 minutes.
Preheat oven to Gas Mark 7, 220°C, 425°F.
Bake for a few minutes until risen and golden brown. Allow to cool before serving.
