Ingredients

115 g butter
30 g confectioner’s sugar, sieved
120 g flour, all-purpose
grated rind of 2 oranges
apricot jam

Instructions

Preheat oven to 180°C.

Mix together the butter and icing sugar together until light and fluffy. Add the flour and the grated rinds, beating well.

Put the mixture into a forcing bag fitted with a large plain tube. Pipe small rounds of the mixture on to a well greased baking sheet. Bake for 10 – 15 minutes.

Allow to cool for a minute and then remove the cakes from the baking sheet with a knife.

When cold sandwich the buttons together with a little apricot jam.
