Luxury panettone recipe details
Ingredients
4 tbsp | milk |
4 tbsp | double cream |
4 tbsp | dark rum |
½ tsp | vanilla extract |
75 g | unsalted butter, softened |
2 medium | eggs, beaten |
50 g | caster sugar |
¾ tsp | salt |
1 ½ tsp | lemon zest |
375 g | plain flour |
1 tbsp | dried active yeast |
85 g | mixed crystallised fruit, eg pineapple, cherries, papaya etc |
75 g | sultanas |
4 tbsp | chopped almonds |
For the Glaze: | |
1 | egg white |
2 tbsp | water |
50 g | caster sugar |
50 g | flaked almonds, optional |
Instructions
Utilises a bread machine to prepare the dough, or you could use a food mixer with dough hook, but baked in the oven.Place all the ingredients, with the exception of the dried and crystallised fruits and the nuts into the bowl of your bread machine in the order specified by the manufacturer.
Set the machine for 675 or 750g size load, according to options offered, and set to ‘Dough’ cycle.
Once the dough has entered the first kneading stage, after 10 minutes, add the fruit and nuts and continue.
Grease 2, 2lb or 900g loaf tins.
At the end of the kneading and raising cycles, and when the machine is finished, remove the dough from the pan. Turn out onto a lightly floured surface and divide the dough equally. Spread the dough into the tins, cover loosely with cling film and allow to rise for 30 minutes.
Preheat oven to Gas Mark 4, 180°C, 350°F. When the loaves have risen, whisk together the egg white, water and sugar and spoon over the tops of the loaves. Sprinkle the almonds over the top if wished.
Bake for about 35 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in tin for 10 minutes and then turn out onto a wire rack to cool.
Serve lukewarm or a t room temperature.
