Ingredients
1 pack(s) | shortcrust pastry |
1 | red bell pepper |
50 g | asparagus |
2 | potatoes |
½ bunch(es) | basil leaves |
100 ml | fresh Ricotta cheese |
1 | egg |
50 g | freshly grated Parmesan cheese |
salt and pepper | |

Instructions
Grease 4 individual small quiche dishes. Roll out the shortcrust pastry and lay out the 4 dishes pulling all sides up.Boil the asparagus and the bell-pepper, cut into strips, for a few minutes to soften.
Lay one layer with the basil leaves. The second layer will be very thin cut potatoes. Then add a layer with the bell-pepper and one layer with the asparagus. Mix Ricotta, eggs and Parmesan cheese together and season well. Pour over the vegetables and bake the quiches at 180°C for 20-25 minutes.
