Ingredients

1 pack(s) shortcrust pastry
1  red bell pepper
50 g asparagus
2  potatoes
½ bunch(es) basil leaves
100 ml fresh Ricotta cheese
1  egg
50 g freshly grated Parmesan cheese
salt and pepper
rosemary

Instructions

Grease 4 individual small quiche dishes. Roll out the shortcrust pastry and lay out the 4 dishes pulling all sides up.

Boil the asparagus and the bell-pepper, cut into strips, for a few minutes to soften.

Lay one layer with the basil leaves. The second layer will be very thin cut potatoes. Then add a layer with the bell-pepper and one layer with the asparagus. Mix Ricotta, eggs and Parmesan cheese together and season well. Pour over the vegetables and bake the quiches at 180°C for 20-25 minutes.
