Toasted french bread with parmesan cheese recipe details
Ingredients
| 10 medium | spring onions, peeled and halved |
| 1 small | lemon, quartered, rind and juice |
| 1 bunch(es) | fresh thyme |
| 2 tbsp | vegetable oil |
| 100 g | Parmesan cheese, freshly grated |
| 1 clove(s) | garlic, halved |
| 4 slice(s) | french bread |
| salt and freshly ground black pepper |
Instructions
Preheat the oven to 180°C.In a roasting tin, combine the spring onions, thyme, lemon juice and rind with the oil. Roast for 20-25 minutes until the onions are soft.
Meanwhile, toast the bread slices under the grill. Rub one side of each bread slice with garlic.
Remove the lemon rind and thyme stalks from the spring onion mixture and season the onions with salt and pepper. Spoon onto each slice of bread and top with the cheese.
Grill for a couple of minutes until the cheese is almost melted and serve immediately with a little fresh salad!
