Ingredients
8 | char fillets, freshly smoked |
1 tbsp | flour, heaped |
1 tbsp | butter, heaped |
200 ml | dry white wine |
200 ml | single cream |
1 dash(es) | lemon juice |
salt and freshly ground white pepper, to taste | |
2 cl | dry vermouth (Noilly Prat) |
¼ tsp | grated lemon peel |
Instructions
Prepare a white roux by melting the butter in a saucepan, adding the flour and stirring for a minute or two. Whisk in the wine and cook, stirring frequently, for 10 minutes over low heat. Add the cream and the lemon peel and cook until slightly thickened. Stir in the Noilly Prat and season to taste with salt, pepper and lemon juice.Preheat the oven to 120°C. Divide the fish fillets side by side at the bottom of a large shallow casserole dish. Pour over the sauce and place into the oven for 30 minutes.
Serve with parsley potatoes and a fresh green salad.
