Ingredients

225 g self raising flour
55 g butter
25 g caster sugar
150 ml milk
1  egg, beaten (to glaze)
pinch(es) salt

Instructions

Heat the oven to 220C/425F/Gas 7. Lightly grease a baking sheet.

Mix together the flour and salt and rub in the butter. Knead in the sugar and then the milk to get a soft dough. Turn onto a floured working surface and knead very lightly. Pat out to a round, 2cm thick. Use a 5cm/2in cutter to cut out rounds and place on the baking sheet. Lightly knead together the remaining dough and cut out rounds until all is used up.

Brush the tops of the scones with the beaten egg. Bake for 12-15 minutes until well risen and golden.

Leave the scones to cool a bit, but serve still warm with butter and jam and maybe some clotted cream.
