- Ingredients
- 2 cups sugar
- 1/2 cup butter
- 3 eggs
- 1/2 cup milk
- 1-1/2 cups pumpkin
- 1-1/2 cups raisins
- 3 cups flour
- 1-1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground clove
Mix all dry ingredients together and set aside. Cream sugar and butter and then add eggs, milk and the pumpkin. The pumpkin can be either fresh or the canned type used for pies. Add the raisins to the dry mix and toss around to coat them, then combine all ingredients. Let stand at room temperature for one hour (the raisins, spices and liquid will “connect” for a nice flavor!). Pour into muffin tin, buttered, or in paper cupcake holders. Bake at 400 degrees for 17 to 20 minutes.
