This Sage and Onion Focaccia recipe is a delicious twist on the classic Italian bread. With the aromatic combination of sage and onion, this focaccia is bursting with flavor. The dough is soft and pillowy, topped with a generous amount of fresh sage and caramelized onions. It's the perfect accompaniment to soups, salads, or enjoyed on its own as a tasty snack.

Ingredients

700 g flour
15 g dried yeast
450  warm water
60 ml olive oil
15  fresh sage leaves, chopped
1 medium onion, chopped
salt, to taste

Instructions

Put the flour and salt into a large bowl, make a well in the centre and gradually work in the warm water and 3 tablespoons of the olive oil. Mix well using a wooden spoon. Add the chopped sage leaves and mix again.

Place the dough on a floured surface and knead it for about ten minutes until smooth. If it is too dry, add a bit more water but do not let it get soggy.

Leave the dough, covered with a dample cloth for about 90 minutes until doubled in size.

Take the dough out of the bowl and knock it back. Now roll it out until it is a rectangle and place it on the baking tray. Stretch it out so that it fits the tray.

Preheat oven to 200°C.

Make deep dimples all over the suface of the dough using your fingertips. Drizzle with the rest of the olive oil and sprinkle the salt on.

Bake for about 25 minutes. Leave to cool on a wire rack.
