Ingredients
700 g | flour |
15 g | dried yeast |
450 | warm water |
60 ml | olive oil |
15 | fresh sage leaves, chopped |
1 medium | onion, chopped |
salt, to taste |
Instructions
Put the flour and salt into a large bowl, make a well in the centre and gradually work in the warm water and 3 tablespoons of the olive oil. Mix well using a wooden spoon. Add the chopped sage leaves and mix again.Place the dough on a floured surface and knead it for about ten minutes until smooth. If it is too dry, add a bit more water but do not let it get soggy.
Leave the dough, covered with a dample cloth for about 90 minutes until doubled in size.
Take the dough out of the bowl and knock it back. Now roll it out until it is a rectangle and place it on the baking tray. Stretch it out so that it fits the tray.
Preheat oven to 200°C.
Make deep dimples all over the suface of the dough using your fingertips. Drizzle with the rest of the olive oil and sprinkle the salt on.
Bake for about 25 minutes. Leave to cool on a wire rack.
