Rocket cream soup recipe details
Ingredients
2 | shallots, chopped |
300 g | single cream |
150 g | rocket |
50 g | sour cream |
salt and freshly ground black pepper | |
30 g | butter |
15 g | flour |
400 ml | vegetable stock |
freshly ground nutmeg |
Instructions
In a saucepan melt the butter and sauté the shallots. Dust with the flour and cook for 1-2 minutes. Pour in the cream and the stock and bring to a boil.Stir in the rocket and cook for 2-3 minutes, then purée the soup. Stir in the sour cream and season to taste with salt, nutmeg and pepper. Serve immediately.
