Rice with peas and pancetta recipe details
Ingredients
1 tbsp | olive oil |
1 tbsp | butter |
2 medium | leeks, finely sliced |
150 g | rice |
1 l | chicken or vegetable broth |
200 g | peas |
2 medium | zucchini, sliced |
4 slice(s) | pancetta |
2 tbsp | Parmesan cheese, grated |
Instructions
Heat the oil and butter in a pan and cook the leeks for 5 minutes. Add the rice, stirring to coat. Add the stock, stirring well. Cover and simmer for 15 minutes.Add the peas, zucchini and season with salt and pepper. Cook for a further 5 minutes until the rice is tender.
Fry the pancetta in a separate pan until crisp.
To serve, spoon rice mixture onto a plate, place pancetta on top and then scatter with Parmesan cheese.
