Rocket salad with turkey breast recipe details
Ingredients
200 g | rocket |
30 ml | balsamic vinegar |
50 ml | olive oil |
salt and pepper | |
1 tbsp | brown sugar |
1 tbsp | orange marmalade |
3 tbsp | sunflower seeds |
2 tsp | mustard |
2 clove(s) | garlic, minced |
3 tbsp | balsamic vinegar |
6 tbsp | sunflower oil |
20 ml | fresh orange juice |
150 g | turkey breast, cut in stripes |
1 | red chili, chopped |
Instructions
In a salad bowl whisk 30ml of balsamic vinegar with sugar and olive oil. Season with salt and pepper. Stir in the chili and half of the garlic. Add the turkey stripes and marinate for 12 hours.Mix the marmalade with mustard, orange juice, 3 tablespoons of balsamic vinegar and the sunflower oil. Season with salt and pepper and stir in the remaining garlic.
Fry the turkey stripes in a pan until golden and crispy all around. In a dry pan toast the sunflower seeds.
Place the rocket into a bowl and mix gently with the orange dressing. Divide on individual plates and arrange the turkey breast on top. Sprinkle with sunflower seeds. Serve with roasted garlic bread.
