Ingredients
4 | salmon fillets |
1 | cauliflower |
some | parsely, chopped |
lambs lettuce | |
tomato pesto | |
small | pot of créme fraîche, at least 200ml or more according to personal taste |
salt and vinegar | |
olive oil | |
balsamic vinegar |
Instructions
Break cauliflower into small florets and boil. When the cauliflower is cooked, place it into a bowl and add chopped parsely and crème fraîche. Season to taste and toss well.Roast the salmon at 200°C for 5-8 minutes until it is pink in the centre.
Meanwhile mix the tomato pesto with some olive oil to make a smooth dressing. Dress the washed lettuce with balsamic vinegar and olive oil.
Place onto plates with mthe mixed cauliflower, place the roasted salmon on top and drizzle the tomato pesto over and around the dish.
