Red Lentil Dhal with Tomatoes recipe

|230 g||red lentils|
|2 tsp||curry powder|
|4||tomatoes, peeled and chopped|
|120 ml||stock or water|
|1 tsp||dry mustard|
|1 clove(s)||garlic, crushed|
If required, soak lentils (see packaging) in water for 1 hour; drain.
Place lentils, salt, curry powder, tomatoes, and onions in a pan, cover with stock or water. Bring to the boil, reduce heat cover and simmer for 30 minutes or until lentils are tender, adding more liquid as necessary. Add mustard, garlic and paprika fo a further 10 minutes.
Note:You can cook this without the tomatoes, but you will need to use more liquid as necessary.
Serving suggestions:Serve as a main vegetarian course with rice or Chapatis/ Naan Bread or as an accompaniment to other curries.
