Queen of puddings recipe details
Ingredients
100 g | breadcrumbs, fresh, white |
600 ml | milk |
50 g | butter |
1 | lemon, grated rind |
275 g | sugar |
6 | egg yolks |
4 | egg whites |
raspberry jam |
Instructions
Evenly divide the breadcrumbs in a greased ovenproof dish.In a small saucepan bring the milk with butter and the lemon rind slowly to the boil, so that the milk gets flavoured of the lemon. Dissolve 50g sugar in the milk, then bit by bit stir in the whisked egg yolks. Pour the mixture on top of the breadcrumbs and bake in the preheated oven at 200°C for approximately 25 minutes.
Shortly before the baking time ends, whisk the egg whites until firm, trickling in 225g sugar.
Heat the raspberry jam and spread evenly on top of the baked egg yolk mixture, then spoon the beaten egg white on top.
Bake at 140°C until the meringue top is firm and slightly golden, then serve.
