Pseudo Caesar with Bagel Croutons

A Caesar salad with a twist.

Ingredients
Serves: 4
- 2-4 cloves garlic, chopped
- ¼ cup extra virgin olive oil, or as needed
- 2 cinnamon raisin bagels (fresh or stale)
- 1 teaspoon white wine vinegar
- 1 large head Romaine lettuce, washed, dried and cut into bite size pieces
- 1/4 cup dry grated Parmesan cheese
- 1/2 cup fresh grated Parmesan cheese
- Pinch salt and pepper
Preparation method
Prep: 25 mins | Cook: 5 mins
1. Croutons: Lightly saute the garlic in the olive oil.
2. Slice and lightly toast the bagels. Brush the bagels with a healthy amount of the garlic infused olive oil (it’s ok to get some garlic chunks on the bagels).
3. Place the bagels on a tray and toast the oil brushed side. Cut into large bite sized pieces.
4. Salad: Add the remaining garlic infused olive oil to the cut Romaine lettuce. Add the vinegar; toss the salad. Add the dry Parmesan and season with salt and pepper. Add the bagel pieces. Serve with freshly grated Parmesan cheese.
