Pasta with zucchini recipe details
Ingredients
3 large | zucchini |
1 | vegetable stock cube |
500 ml | water |
100 ml | dry white wine |
200 ml | olive oil |
200 g | pasta |
Instructions
Rinse zucchini and cut off ends. Process in a blender until purreed.Heat olive oil in a large saucepan. Add pureed zucchini, water, wine and stock cube. Reduce heat, cover, and cook until tender, about 30-45 minutes.
When zucchini are almost tender start cooking the pasta. Either cook pasta with the zucchini and add a bit of extra water or cook the pasta separately and mix with the zucchini when al dente.
Mix pasta and zucchini together and serve.
