InstructionsWash but don’t peel the eggplants and leave the stems on the fruit. Prick the eggplants with a fork and bake in the oven at 180° for approx 30-40 minutes until soft.
Let cool slightly and then peel off the skin, it will come off easily when baked, just peel back with your fingers. Lightly flatten the eggplant with the fork.
Mix eggs, flour and some salt and turn the eggplants in this batter. Fry in hot oil and turn over by holding on the stem of the fruit until golden brown.
