Pasta with Winter Squash Sage and Parmesan recipe

Ingredients
400 g | squash (Crown Prince, Butternut, Onion squash or Sweet Dumpling) |
2 clove(s) | garlic, finely sliced |
6 leaves | sage |
50 g | parmesan |
200 g | penne |
butter | |
olive oil |
Instructions
Cut the squash into chunks about ˝”. Put the pasta on to boil as per instructions.
Melt the butter in a frying pan with the olive oil and lightly flavour with the garlic, then sauté the squash until it is soft, with a few chopped leaves of fresh sage.
Drain the pasta and pour over the squash and its oil and juice. Mix and sprinkle with more chopped fresh sage and freshly grated Parmesan.
Variations:
Roast the squash in wedges in the preheated oven at full temperature, with butter, chopped garlic and and chopped parsley, then dice and add to the pasta.
