Pan Fried Minced Meat and Zucchini with Rice recipe

Ingredients
250 g | long grain rice |
salt and pepper | |
1 | onion |
2 medium | zucchini, approx. 600g |
2 tbsp | oil |
500 g | minced meat, pork and beef |
500 g | tomatoes, puréed |
1 tsp | dried herbs |
1 tbsp | soy sauce |
mild paprika powder |
Instructions
Cook the rice with 4 cups of water and ½ tsp. of salt over low heat until done.Dice the onion and cut the zucchini in slices.
In a skillet, heat the oil and sauté the onion until lucent. Add the minced meat and sear over high heat until crumbly and brown. Add the zucchini and the herbs and cook for further 5 minutes. Season to taste with soy sauce, paprika, salt and pepper. Serve with the rice.
