Paddington pudding recipe details
Ingredients
100 g | white breadcrumbs |
100 g | raisins |
100 g | shredded suet |
100 g | flour |
grated rind of 1 lemon | |
50 g | caster sugar |
1 pinch(es) | salt |
60 ml | marmelade |
2 medium | eggs, beaten |
80 ml | milk |
Instructions
Grease a large heatproof bowl with some butter. Bring water to a boil.Combine the breadcrumbs, raisins, suet, flour, grated rind, sugar, salt and marmalade in a mixing bowl. Stir in the beaten eggs and milk.
Spoon the mixture into the prepared bowl, cover with foil and secure with string.
Put the bowl with the pudding in a water bath of boiling water. Steam the pudding over the simmering water for 90-120 minutes.
Remove from water and heat and leave to cool for 5-10 minutes at room temperature to firm up.
To serve, turn out on to a serving plate.
