Mussels with white beans recipe details
Ingredients
1 large | onion, chopped |
5 clove(s) | garlic |
3 slice(s) | bacon, cut in strips |
2 tbsp | olive oil |
1 kg | mussels |
1 l | chicken broth |
1 can(s) | white beans, rince |
3 | tomatoes, skinned, seeded and diced |
1 bunch(es) | parsley, chopped |
lemon juice, salt, cayenne pepper |
Instructions
Brush and clean mussels thoroughly, throw away any open shells.Fry onion, garlic and bacon in olive oil, add broth and mussels, heat till mussels open, throw away any closed.
Add tomatoes, beans, chopped parsley and lemon juice. Season with salt and cayenne pepper.
Serving suggestion:Serve with baguette and aioli.
Note:If you want to use fresh beans, let 150 g soak overnight, and cook for 2 hours. Throw away water, and proceed as above.
