Ingredients
1 l | rich beef or chicken stock |
4 slice(s) | white bread |
2 tbsp | butter |
4 | fresh free-range eggs |
4 tbsp | freshly grated Parmesan cheese plus more on the table |
Instructions
In a pan melt the butter and fry the bread until golden on both sides. Bring the stock to a boil. Heat individual soup plates or bowls in the oven.Place a slice of bread in each bowl, and crack an egg onto each, being very careful not to break the yolk. Divide the very hot stock into the plates and sprinkle with Parmesan cheese.
Serve immediately with extra Parmesan at the table.
