French chocolate truffle cake recipe details
Ingredients
250 g | baking chocolate, unsweetened , roughly chopped, or 70%+ chocolate |
250 g | granulated sugar |
250 g | butter |
6 large | eggs, separated |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Butter and flour a 9inch, 22cm loose-bottomed cake tin.
Melt chocolate and butter together in a bowl over a pan of hot water on a low to medium heat. Do not allow bottom of bowl to touch the water. Stir until smooth, remove from heat and allow to cool.
In another bowl, whisk yolks with sugar until light and then whisk in chocolate.
Beat egg whites in a clean bowl until firm and peaks form. Gently fold into batter.
Pour 2/3 of batter into prepared tin and bake for 40 minutes. Refrigerate remaining batter.
Remove cake from oven and allow to cool. Remove from tin. Cut into two equal rounds.
Remove unused batter from fridge and whisk it to lighten and aerate. Spread half of this amount onto the base of the cake and replace the top. Spread the remaining batter on the top and refrigerate for at least 3 hours.
Cut into wedges to serve still chilled.
