Italian baked eggs recipe details
- Ingredients
- 1 heaping Tablespoon marinara sauce (I make my own or use jarred, adding fresh garlic, parsley, onion, mushroom, celery, black olives or any combination of the above that I have on hand)
- 2 eggs
- 1 tablespoon of half & half
- shredded mozzarella and jack cheese
- Parmesan cheese
- parsley
- olive
Use oven-proof 6- or 8-ounce bowls. Spray with non-stick cooking spray Into the bowl, layer the marinara sauce. Break the eggs into a bowl, leaving whole. Spoon in half & half over eggs. Cover with shredded mozzarella and jack cheese. Sprinkle with Parmesan. Bake at 400 degrees until eggs set. (I place the bowls on a cookie sheet and when the eggs appear set when shaking the cookie sheet they are done. This takes a little practice. There is no use timing the eggs because they come in different sizes and also the time it takes to cook varies depending on how many bowls are in the oven at one time.)
Can serve with parsley and olive on top.
