Irish potato soup recipe details
Ingredients
400 g | potatoes |
160 g | butter |
¼ l | cream |
½ l | stock |
1 dash(es) | nutmeg |
1 dash(es) | pepper |
1 dash(es) | salt |
60 g | cèpes |
2 tbsp | parsley |
Instructions
First boil the potatoes and make a potato mash. Add 80 g butter and 1/4 l cream and mix everything fast until the potato mash gets creamy.Add 500 l stock to the potato mash and bring to a boil. Keep stirring everything and add one or two dashes nutmeg, pepper and salt.
Brush and slice the cèpes and sear them in 80 g butter while stirring constantly. Season the sliced cèpes with parsley and arrange them on top of the soup.
If you do not like cèpes you can also use bacon.
