Boxty bread is a traditional Irish potato bread that is crispy on the outside and soft on the inside. Made with just a few basic ingredients including potatoes, flour, and buttermilk, this recipe is perfect for breakfast or as a side dish. The dough is shaped into round loaves and baked until golden brown, resulting in a bread that is hearty and full of flavor.

Ingredients

230 g potatoes (weight when peeled)
230 g potatoes, cooked and mashed
230 g melted butter or margarine
230 g plain flour
3 tbsp cheese, grated
salt and pepper, to taste

Instructions

Preheat oben to Gas 3; 325°F; 160°C.

Lightly grease or line a flat baking tray.

Try to time the cooking and mashing process so that those pots are ready around the time you add the raw ones.

Grate the raw potatoes, wrap in a cloth and squeeze out any fluid into a bowl. Keep for later. Mix the grated pot with the mashed ones immediately.(This avoids discolouration)

Add the melted fat and the flour. Mix well and season to taste. Pour away the potato liquid you saved and then scoop out the starchy sediment and add to your mixture. Mix well.

Mix in grated cheese.

Flour a board or worktop and tip out the mixture. Knead lightly, using spare flour to stiffen. When you have a firm, bready consistency, shape into a round or whatever shape you fancy approximately 1/2 inch (1.5 cm) deep.

With a slice or spatula, carefully transfer the round to the baking tray and mark out 8 sections. Here I like to add some thin pieces of mature cheese to the top. You can make all sorts of little additions as the fancy takes you.

Place in the oven top shelf for around 40-45 mins or until firm and holds its shape when cut. Try a tiny triangle cut from the edge, that’s my excuse for getting an early taster.

Delicious hot or cold, solo or as part of a meal.

Serving suggestions:Serve with 3 tablespoons of grated good strong cheese of your preference. Drizzle with a bit of Worcestershire sauce.
