Irish honey beef roast recipe details
Tender beef roast to feed a crowd, flavored by Guinness(R) beer and honey. Put this in the slow cooker in the morning and come home to the finest dinner you’ll have all month.

Ingredients
Serves: 4- 8 red potatoes
- 4 carrots, cut into 1-inch pieces
- 2 onions, quartered
- 1 (4 pound) boneless beef chuck roast, trimmed and cut in half
- 1 (14 1/2 ounce) can beef broth
- 1 cup Guinness beer
- 1/2 cup honey
- 3 garlic cloves, minced
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 2 tablespoons cornstarch
- 1/4 cup cold water
Preparation method
Prep: 10 mins | Cook: 8 hours1. Layer the potatoes, carrots, and onions in a large slow cooker. Set roast halves on top of the vegetables.
2. In a mixing bowl, whisk broth and beer together with honey, garlic, marjoram, thyme, salt, pepper, and cinnamon. Drizzle over the beef.
3. Cook on LOW for 8 to 10 hours.
4. Lift roast out of the slow cooker and set on a platter. Lift vegetables out with a slotted spoon and place in a serving bowl.
5. Pour 1 cup of the cooking juices into a saucepan and set over high heat. While the juices heat: whisk cornstarch with water in a separate bowl.
6. When juices come to a boil, add the cornstarch mixture. Cook for 2 more minutes to thicken.
7. Serve roast beef and vegetables with the sauce spooned over each helping.
