Huevos poblanos recipe details
- 10 to 12 eggs, beaten
- Mrs. Dashseasoning
- 1/4 cup dry onions
- 2 Tablespoons chopped parsley
- 24 ounces creamed cottage cheese
- One 4-ounce can chopped chiles
- 1/2 pound cooked bacon, crumbled
- 1 cup grated cheddar cheese

Preheat oven to 350 degrees. Spray a 9 x 13-inch baking pan with vegetable coating spray. In a large bowl, whip eggs until frothy. Sprinkle 2 to 3 shakes of Mrs. Dashseasoning on top and stir in onions and parsley. Blend in each of the remaining ingredients gently. Pour into prepared pan. Bake, uncovered, 45 to 50 minutes.
Variation: Omit chiles and bacon and stir in 8 ounces of cooked turkey breakfast sausage, or omit chiles and bacon and stir in 2 cups diced ham.
