This very simple and tasty tuna, caper and tomato rice salad well known to many families is easy and fast to prepare, and will delight everyone in summer.
Ready in: 2 hours 40 mins
Ingredients
Serves: 4- 1 cup long grain white rice
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1 (6 ounce) can tuna fish, in water or olive oil
- 1/2 cup chopped olives
- 3 tablespoons capers
- 2 tomatoes, chopped
- 1 small cucumber, chopped
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- Salt and pepper, to taste
Preparation method
Prep: 10 mins | Cook: 30 mins | Extra time: 2 hours, cooling1. Cook the rice according to package directions, about 30 minutes, and let it cool to room temperature, about 1 hour.
2. Add the remaining ingredients to the rice and mix. Cover and refrigerate for at least 1 hour. Serve.
