Crustless quiche recipe details
- Ingredients:
- 1 bunch green onions, diced with some green stems
- 5 large mushrooms, chopped
- 12 eggs
- 1/2 cup half & half
- 1/2 cup flour
- 1 teaspoon baking powder
- 1-1/2 teaspoons seasoned salt
- 1 teaspoon Spikevegetable seasoning (great in almost everything).
- 1/2 cup melted butter
- 1 pint cottage cheese
- 1 pound Monterey Jack cheese, grated
- 10 ounces Ortegadiced chilis
Saute onions in some butter until limp. Add mushrooms and cook for another 5 minutes, then remove from heat. While these are cooking, mix half & half, flour, baking powder and whisk until smooth. Beat eggs lightly in large bowl, add flour mixture, seasoned salt, Spike, butter, onions and mushrooms and stir to mix. Finally, stir in cottage cheese and Jack cheese. Pour into prepared or non-stick pan.
Bake at 400 degrees for 8 to 10 minutes, then at 350 degrees for 35 to 40 minutes. Test for doneness with toothpick; if clean on removal – it’s done.
Serve with Polska Kielbasa (sliced in half and grilled under broiler until brown) and rolls with jellies.
