Ingredients:
1 cup white flour
1 cup whole wheat flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 eggs
3/4 cup sugar
1/2 cup buttermilk
1 teaspoon vanilla
1/2 cup oil
1-1/2 cup grated carrots
1-1/2 cup grated apples
3/4 cup grated coconut
1/2 cup chopped dates
1/2 cup chopped walnuts
Instructions:

“Pookie” is a term of endearment for children in Texas.– Helen King

Sift together flours, baking soda, salt, and cinnamon. Beat eggs. Add sugar, buttermilk, vanilla, and oil. Blend half of dry ingredients into carrots, apples, coconut, dates, and walnuts. Add egg mixture and other half of dry ingredients. Stir until blended. Do not over-mix. Spoon batter into greased muffin pan, or line with paper muffin cups. Bake at 375 degrees 15 to 18 minutes. Remove from the oven when they “spring back” and are golden brown. Let cool on a wire rack for a few minutes before serving. These freeze well.

Makes: 24 muffins
