- Ingredients:
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup packed brown sugar
- 1/4 cup oil
- 1 teaspoon vanilla
- 1 cup diced, unpeeled apple
- 1 cup fresh cranberries
- 1/2 cup coarsely chopped walnuts

Heat oven to 350 degrees. Grease a 12-cup muffin pan. Mix flour, baking soda, cinnamon, and salt in a large bowl. Beat eggs in another bowl. Add sugar and beat again. Whisk in oil and vanilla. Stir in apple, cranberries, and walnuts. Pour over dry ingredients and fold in just until moistened. Spoon batter into muffin cups and bake 20 to 25 minutes or until one muffin center tests done.
