Cole slaw with an island twist recipe details
This Slaw is a variation of my basic southern Cole Slaw. You can substitute the lime and lemon juice for the vinegar and ad mango and pineapple. It is an awesome addition to the Cuban Style Pulled Pork Sandwiches
Ready in: 1 hour 30 mins
Ingredients
Serves: 16- 4 cups shredded slaw mix with red cabbage
- 2 each mangos, peeled and diced small
- 2 6 oz cans, chunked pineapple, drained
- 4 tablespoons pineapple juice reserved from canned pineapple
- 1 teaspoon celery seed
- 1/4 cup granulated sugar
- 1/2 cup + mayo
- 2 limes juiced
- 1 lemon juiced
- to taste kosher salt
- to taste fresh ground black pepper
Preparation method
Prep: 30 mins | Extra time: 1 hour, chilling1. Place slaw mix in large mixing bowl and add the mango, pineapple, reserved pineapple juce, juice of lemon and limes, celery seed, and sugar, mix well and allow to rest for 15 minutes, add mayo and chill 1 hour.
2. When ready to serve additional mayo, 1 Tbs, at a time, may be added to achieve the desired consistency in the dressing. Season with salt and pepper and serve.
