Wild Mushroom Ragout details
This recipe is suitable for diabetics. Ingredients:- 1 tbsp Olive Oil
- 1 lb Mushrooms, assorted fresh
- 1 Large Onion, diced
- 1 tsp Fresh Garlic, chopped
- 1 tbsp Fresh Basil, chopped
- 1 tsp Fresh Rosemary, chopped
- 1 ½ tsp Fresh Thyme, chopped
- 1 tsp Sea Salt
- ¼ tsp chili flake, crushed
- 1 lb Fresh Roma Tomatoes, large diced
- 1 lb White Beans, cooked
- ¼ cup Parmesan, grated
- In a large skillet over medium heat, heat warm oil until hot.
- Add mushrooms, onions, garlic, salt and chili flakes.
- Cook until tender, stirring occasionally, about 10 minutes.
- Add fresh tomatoes and white beans to skillet.
- Heat through, stir in 2 tablespoons of grated parmesan cheese and serve over whole grain of choice.
- Sprinkle with the remaining cheese over the top of your dish.
