Always a Christmas treat when I was a kid – A shredded coconut covered chocolate roll mixed with walnuts, shredded coconut, and miniature colored marshmallows. My mom used to always make these when I was a kid – I’m not sure where she got the recipe from. 2 rolls was never enough, because everyone would devour them instantly. Unfortunately, I don’t have a photo to submit yet – I will get one asap, but I do hope you enjoy them, and Merry Christmas!

Ingredients
Serves: 24- 1 (12 ounce) package chocolate chips
- 1/2 cup margarine
- 1 cup chopped walnuts (or any kind nuts preferred)
- 1 (10 1/2 ounce) package miniature colored marshmallows
- 1 package shredded coconut
Preparation method
Prep: 45 mins | Cook: 15 mins1. Melt the chocolate chips and margarine and let mixture cool (you don’t want to melt the marshmallows when you mix them in).
2. Add the nuts, marshmallows and a 1/2 package of coconut (or amount preferred). Make into 2 rolls. Roll the outside of the two rolls in the rest of the coconut. Wrap each roll in wax paper and then chill.
3. Cut into slices and serve.
