Cheese and walnut loaf recipe details
Ingredients
25 g | fresh yeast, or 1 packet of dried yeast with a pinch of sugar |
300 ml | tepid water |
450 g | strong wholemeal flour |
1 tsp | salt |
½ tsp | paprika |
1 ½ tsp | mustard powder |
175 g | Cheddar cheese, grated |
110 g | walnuts, chopped |
3 tbsp | fresh mixed herbs, chopped or 1 tsp dried herbs |
Instructions
Grease a large loaf tin. Blend the fresh yeast with the warm water. If using dried yeast, sprinkle it into the water with the sugar and leave in a warm place for 15 minutes until frothy.Put the flour, salt paprika, mustard powder, 100g of the cheese, the walnuts and the herbs in a large bowl and mix together. Make a well in the centre and pour in the yeast liquid. Beat well together until the dough leaves the sides of the bowl clean.
Turn the dough onto a lightly floured surface and knead well for about 10 minutes until smooth and elastic. Place in a clean bowl and cover with a damp tea towel, then leave in a warm place for about 1 hour or until doubled in size.
Turn the dough onto a floured surface knead lightly. Then shape to fit the loaf tin. Cover and leave in a warm place for another 30 minutes or until the dough has risen almost to the top of the tin.
Sprinkle with the remaining cheese and bake at 190º until well risen. The loaf should sound hollow when you tap it on the bottom. Leave to cool on a wire rack.
Note: You can also vary the ingredients i.e. use half cheese, half cured ham. For the herbs, I used fresh chives and parsley.
