Bread pudding with cranberries, raisins and nuts topped with an orange/coconut dressing

Ingredients
Serves: 8- 6 slices bread (any kind)
- 1/2 cup cranberries
- 1/4 cup golden raisins
- 1/4 cup chopped walnuts or pecans or almonds
- 3 tablespoons melted butter
- 4 eggs
- 2 cups milk
- 3/4 cups white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 3/4 cup coconut milk
- 1/2 cup orange juice
- 1 (3.4 ounce) instant vanilla pudding
Preparation method
Prep: 15 mins | Cook: 45 mins1. Preheat oven to 350 degrees F
2. Cut bread into 1 inch cubes and place in a 8 inch square baking dish. Spread cranberries, raisins, and walnuts evenly over bread. Drizzle butter over dry mix.
3. In a large bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat with wire whisk until blended well. Pour over bread mixture being sure that all the bread is wet.
4. Bake for 45 min or until top is well risen and fluffy, lightly browned. Let sit 10 minutes.

6. Blend coconut milk with orange juice, mix well. Add pudding mix, whisk until silky. Add more orange juice if you want it thicker. Serve over warm bread pudding.
