Banana and Walnut Loaf recipe

Ingredients
150 g | plain flour |
120 g | sugar |
1 tsp | baking powder |
½ tsp | bicarbonate of soda |
1 pinch(es) | salt |
300 g | bananas, peeled and mashed, 2 medium large |
1 tbsp | vegetable oil |
80 ml | buttermilk |
2 tsp | vanilla extract |
30 g | chopped walnuts |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Lightly oil a 1lb, 500g loaf tin and set aside.
Blend all the dry ingredients, including the nuts, in a large bowl. Mash the banana in a small bowl and add the oil, buttermilk and vanilla extract and mix thoroughly. Pour the mixture into the dry ingredients and stir until just mixed. If dry, add a little milk or buttermilk and mix quickly.
Pour mixture into tin and bake for about 50 minutes or until rich brown on top and a skewer inserted into the centre of the cake comes out clean.
Cool in tin and then turn out onto a wire rack to completely cool before serving.
Serve in slices, plain or buttered.
