Ingredients
1 | onion, chopped |
300 g | mushrooms, halved |
4 slice(s) | smoked salmon, halved |
2 slice(s) | wholemeal bread, quartered |
4 | hard boiled eggs, peeled and halved |
100 g | single cream |
45 g | butter |
1 tbsp | flour |
100 ml | vegetable stock |
salt and pepper |
Instructions
In a pan melt the butter and fry the bread slices from both sides for 2-3 minutes. Drain on kitchen paper.Fry the onions and the mushrooms in the pan for 2 minutes. Dust with the flour and cook stirringfor 1-2 more minutes. Pour in the stock and the cream and bring to a boil, stirring constantly. Reduce the heat and simmer for 10 minutes. Season to taste with salt and pepper.
Top the bread slices with salmon and half eggs. Serve with the mushroom sauce.
