A stew that tastes as good as it looks. Potatoes get browned in the last 20 minutes of cooking for appearance and crispiness.

Ingredients
Serves: 4- 1 pound boneless, lean lamb-leg steaks, each steak cut into 4 pieces
- 2 pounds potatoes, peeled and thickly sliced
- 1 onion, sliced
- 1 pound carrots, thickly sliced
- 2 tablespoons chopped parsley
- 1 teaspoon fresh thyme leaves
- 1 tablespoon snipped fresh chives
- 2 cups hot vegetable stock
Preparation method
Prep: 20 mins | Cook: 2 hours 20 mins1. Preheat oven to 320 degrees F. Coat a Dutch oven or 13×9-inch baking dish with nonstick cooking spray.
2. Layer the meat, potatoes, onion and carrots in prepared baking dish, sprinkling herbs and pepper throughout. Make the top layer potatoes. Cover with stock.
3. Place lid on Dutch oven or tightly cover 13×9-inch dish with aluminum foil. Bake for 2 hours, then increase oven temperature to 395 degrees F and bake uncovered for 20 minutes. Serve.
