A simple, filling breakfast casserole starring one of your favorites–wonderful, wonderful bacon.
Ready in: 55 mins
Ingredients
Serves: 8- 9 bacon strips
- 9 eggs, beaten
- 3 cups 2-percent milk
- 3/4 cup biscuit/baking mix
- 1 1/2 cups shredded pepper Jack cheese
- 1 large onion, chopped
- 1 large red bell pepper, chopped
- Salt and pepper, to taste
Preparation method
Prep: 10 mins | Cook: 45 mins1. Cook bacon in a skillet over Medium-High heat, in batches if necessary. Set on paper towel to drain off fat, then chop into small pieces.
2. Preheat your oven to 350 degrees F. Spray a 13×9-inch baking dish to coat with nonstick cooking spray.
3. In a large bowl, combine bacon and all remaining ingredients. Pour into prepared baking dish and put in oven. Bake for 45 to 55 minutes, until center is set.
4. Remove from oven, allow to set for 10 minutes, then serve.
