Azerbaijani pilaf recipe details
Ingredients
400 g | long grain rice |
750 ml | beef stock |
900 g | broad beans |
3 tbsp | vegetable oil |
2 tbsp | butter |
350 ml | water |
1 tsp | plain flour |
2 tbsp | lemon juice |
2 bunch(es) | dill |
salt, to taste |
Instructions
Melt the butter in a large saucepan. Add the water, flour and lemon juice. Add the broad bean and bring to a boil. Reduce heat and simmer for 40-45 minutes.Add the stock and bring back to the boil and reduce heat to a simmer.
Meanwhile, steep the rice in boiling water for 10 minutes. Drain thoroughly.
Heat a frying pan and add the oil. Sauté the rice in the oil for a few minutes, tossing occasionally.
Add the rice to the stock with the remaining ingredients and cook until rice is tender and all the liquid has been absorbed.
Serve immediately with kofte or other meat dish.
