Apricot bread pudding recipe details
- Ingredients:
- 2 eggs
- 1-3/4 cups milk
- 1/4 cup sugar
- 1 teaspoon vanilla
- 4 to 5 slices day-old bread (broken into pieces)
- 8 to 10 dried apricots, chopped
- 1/4 cup raisins
- Topping:
- 3 Tablespoons butter (cut-up)
- 3 to 4 Tablespoons cinnamon/sugar mixture
Preheat oven 325 degrees. Grease or spray 9 x 13-inch baking dish. Toss bread, apricots, and raisins and arrange mixture in baking dish. Set aside. In large bowl, whisk eggs, sugar, milk, and vanilla until well mixed, about 2 to 3 minutes. Pour over bread and let stand 15 minutes. Bake at 55 to 60 minutes until firm. Serve warm with light cream or maple syrup.
